This is one recommendation that I am actually extremely excited and thrilled to write! Jack…was an integral part in providing me, and our general manager the confidence necessary to open our first coffee lounge, Coffee at The Point.
I was/am extremely impressed with Jack’s knowledge, teaching style, and willingness to share what some would consider trade secrets…all to assist us in getting on the right track to having a successful coffee lounge. What was even more impressive was Jack’s willingness to answer a barrage of questions after we left (our training at) the Barista School. As we would think of something, we would email Jack. He always responded extremely promptly and with thorough answers so we could make an educated decision on which particular ‘direction’ we wanted to go.
In addition to attending the Midwest Barista School, we hired Jack to do an on-site consultation a week prior to us opening the doors. This was absolutely tremendous. To make a long story short, I strongly believe we avoided some pitfalls that would have stalled our open.
My expectation is that our coffee shop, which opened November 13, 2010, will have an extremely healthy revenue stream…we have already exceeded expectations (with sales, quality of drinks, quality of service, and ambience). I learned of On Track Coffee Consulting and JP's Coffee through our coffee roaster. After several visits to observe their coffeehouse, I was very impressed with the quality and passion that I noted throughout the workforce. From new hires to their baristas, trainers, and managers, this was clearly an establishment of "coffee geeks" that took their craft seriously.
As a multi-unit operator, I have faced significant challenges in assuring effective training, and producing consistently high quality beverages. We worked with OTCC to develop a custom training program offsite of our location that would allow us to take our training and product quality to a higher level. I was especially grateful that OTCC was willing and able to customize their program to our operations, and not simply slide us into a "cookie cutter" training program
As a "food first" cafe, we targeted beverages as our most significant opportunity for growth in our markets last year.
